Caleb's 20 Month Update

Twenty months! Caleb is no longer in the teen months and he is creeping closer and closer to two years - yikes! 

I found myself looking at videos and photos of when Caleb was younger, and it's amazing to compare last year to this year. Not to mention, just how cute he keeps getting. He's my handsome pumpkin, sweetie, sweetie pie, sugar plum (yup, all names I call him). 

In my usual fashion I couldn't decide which photos to share, so you get them all. You better sit back as there is ton of photos here...

I officially feel like Lois in Family Guy now as it's mommy-mommy-mommy. Similarly, he also loves to say, "no no no no no." It's never just one no; always a series of no's. But he's doing such cute things, too. A favorite is when he blows on his food when I blow on it to cool it off. Or, how he'll stare endlessly at wheels and gears trying to understand. The cutest of all is his giggling, though.

Playtime is Funtime

Playtime is the best. He still loves to push his dump truck around everywhere. He figured out how to ride the motorbike, too. And he definitely understands when I say, "let's go to the park" because he'll say "OK" and then immediately run for his shoes. 

That water pump blew his mind! And the magnetic board was the longest he has stayed in one spot...ever. 

Reading

I love that he's getting more interested in reading. It's mostly all trucks, cars, and dogs, but hey it's reading! Favorite books right now include: Little Blue Truck, Trucks, Toot Toot Beep Beep, Goodnight Goodnight Construction Site, Cars and Trucks and Things that Go, and Harry the Dirty Dog. Look, he was even reading in the car!

VW Bus Toy

This is a current favorite toy. It was actually something Josh owned pre-Caleb, then Caleb found it and it became his bus. He takes it everywhere - car, bath, even to bed. He pushes it around and says, "beep beep!" What is it with boys and cars? 

O'Neill Grandparents Visit 

It was so much fun having Grandma Jan and Grandpa John in town. Not to mention, it meant his very own gelato courtesy of Grandpa John, haha.  (Gosh I still have to write a post about their visit! Yikes!)

Mommy and Me 

I just love this little guy. I feel so lucky that I get to enjoy so much time with him.  

Daddy and Me

Caleb loves his Daddy! It's cute and a little heartbreaking when he watches dad leave in the morning. But we love our family weekend time together. 

Friends

We have made so many great friends. It's cool because the kiddos are starting to interact more rather than just playing in the same room. We hosted a summer toddler time at the park and also had our out-of-town friends, Jeff, Melissa, and Thomas visit. Oh, and we are so lucky to have some neighbors with kids, which is awesome!

New Experiences

Well, a new experience plus something that's not going to happen again for a long time: the eclipse. We got to see about a 94% eclipse. We went to the Point Defiance Zoo to join in all the fun with other viewers (and since we didn't have glasses at home - dang, those thing sold out fast!).

Caleb also got to enjoy his first ferry ride. We went to Vashon Island with Grandma Jan & Grandpa John. Such fun!

Walking and Exploring

If there is one things about Caleb, it's that he loves to explore and see new things. He wants to see all the things and do all the stuff. I love it when he sees something and says, "wow!" And Caleb prefers to say "heck no" (he doesn't really say that, btw). Why sit when you can walk. Now, if only he'd listen to me and stay close by. When do they start listening to you? (wait, don't answer that.) But he is definitely Mr. Curiosity! 

Sweets

Well, he's definitely his mom's son and has a sweet tooth, especially soft serve! The joy in his face when he eats ice cream or froyo is the best. He also discovered chocolate - he grabbed the last two bites of my chocolate chip cookie and gobbled it up while giggling and running around the house. 

The Sillies 

Such a silly guy (yup, I intentionally put this photo set after sweets, wink wink). He loves putting my shoes on his feet and putting things on his head (tupperware, buckets, drums) except for hats made for him - only mom or dad's hat. The red tupperware is his favorite to put on his head. The photo with the yogurt stash and tupperware hat is classic Caleb.

This and That

He is quite the helper (cough cough) in the yard and kitchen. Also, he got to see more of his Croatian roots at the Croatian festival (which was mainly just eating some food and then hightailing it to the park next door). 

He discovered a love for stuffed animals and will point at every truck/car/bus that goes by (check out the center photo - he's very focused on a bus). And sometimes you just need to take a break and lie down flat on the floor. 

This kid, I tell you...such a joy! 

A Few iPhone Photo Tips

You guys know I love to take photos. The number of photos I take since Caleb came around has increased exponentially. Hardly a day passes without at least one photo. So I figured, as someone who takes a lot of photos, I should have a few tips up my sleeve. But here's the thing, I use my iPhone for like 95% of my photos these days. I love my DSLR camera, but itโ€™s hard to always have on-hand to capture all the daily moments - Caleb's cuteness doesn't stop for me to grab a camera, you know. Instead, I use my iPhone all. the. time. So yea, itโ€™s permanently in my back pocket. And yes, it's an iPhone. I couldn't be married to Josh and have something non-Apple. We're an Apple family. So here are a few tips for an iPhone you might find helpful!

Tip #1 โ€“ Burst Mode

Burst mode, not beast mode (for those of you in Seattle area). I'm not a Seahawks fanatic, but for some reason that came to mind. Okay, let's move on now that some of you are shaking your heads. So, it makes sense that the more photos you take, the more likely youโ€™ll get a good one, right? Well, you can take a ton of photos at once with the burst mode. When you take a photo, hold down the shutter button to get a burst of photos. Itโ€™ll capture multiple photos as you continue to hold down. On your photo stream, the phone automatically selects what it thinks is the best photo of the sequence. However, I always go and look at the others since it doesnโ€™t always get it right. When you have the photo open, go to the โ€œselectโ€ function. You can select one or many photos to keep. Boom, magic! 

Tip #2 โ€“ The Timer

This is an easy one to forget about, but comes in very useful especially with selfies. I always struggle trying to hold the phone steady and hit the shutter button at the same time. You end up with blurry photos! Instead, use the timer to give yourself time to hold out the phone, get steady, and smile. Or, find a place to set the camera down (safely!) to get the whole family. 

Another note: You might be thinking you can use the side button to take the photo,. However, I still shake the phone when I use this method and end up with yet another blurry photo. If you have solid steady hands, then go for it. 

And...I've always wanted a photo of Caleb's basketball hoop. 

Tip #3 โ€“ Swipe Left

The best photos tend to be random and happen quickly. By the time you pull out your photo, unlock it, go to the photo app, and hit the shutter button, the moment is lost. There is a quicker way to get to that camera โ€“ just swim left! This skips all those other steps so you get get to the camera quickly and capture the moment.

Tip #4 โ€“ Clean Lens

Obvious, yes but yet I still fail to do this one as often as I should. Caleb is obsessed with my phone, especially when he realized it plays videos of dogs. Now, heโ€™s constantly reaching for it, but his little boy hands can get the phone dirty. So now I need to be sure to clean off my phoneโ€™s photo lens to avoid blotches in photos. A nice microfiber cloth will wipe it off in a jiffy.

Tip #5 โ€“ Tap for Focus

You might notice the square that pops up when you take a photo. It usually tries to help identify faces. Help it out and tap on the square. This helps the camera focus on the face (or other object) to make a clearer photo.

Great, now you have a few tips in your back pocket. But, wait! Be sure to share the photos, too.

Idea #1 โ€“ Edit Photos

The phones have some great tools for editing photos. You can use the Photos app itself to edit; just click on the photo and youโ€™ll see the edit tool on the bottom as three bars. In a hurry, use the automatic enhance wand. Otherwise, I love Retouch and Afterlight apps for retouching my photos. The former is great at removing unwanted objects from your photos (seriously, cool).

Idea #2 โ€“ Photo Share

We use the photo share a bunch in our house. When Caleb was born, we started a share with both sets of grandparents and share photos everyday. They love it!

Idea #3 โ€“ Print them Out

Donโ€™t let your photos just sit there on your phone or computerโ€ฆturn them into prints or books. Shutterfly, Artifact Uprising, Minted, Blurb, Apple...so many options these days.

Caleb's 19 Month Update

At 19 months, Caleb is now officially headed towards the big two and I'm sure it'll be here before we know it. He is definitely a toddler and loves to run, climb, point, tumble, tantrum, and "talk." I love his little wisps of hair and goofy personality. And, of course, the monthly block photos just get harder and harder. This time he thought throwing them on the hardwood floors would be a good idea. 

Bloopers

Everyone loves bloopers, right? I get a lot of those when trying to take Caleb's monthly photos. Here's a few favorites:

Nothing too crazy new over the past month. Still lots of "ohs" and "okays" and some more teeth popped in on the bottom. Josh was happy to see him eat meat like sausage, ground beef, and meatballs...thata boy. 

Playing

Playtime is the best time. Caleb couldn't think of anything better than spending an afternoon at the park. Well, I take that back. Trucks and cars would be pretty good ways to spend the day, too.

Oh, and a new game in the locker room - hid in the locker and then bang on it. Fun.

On the Go

Always on the go. Never stop. Only pause to point at something or check it out, otherwise just go-go-go. Many of my photos are of his back since he runs off as soon as his feet hit the ground.

Friends

We both love hanging with our peeps. We had some good times with our friends this past month. And of course, Caleb got some quality time with Asha. 

Nom Nom Nom

Caleb's favorite food is still fruit especially blueberries. Sadly, the blueberries on our bush are slowly disappearing for the season. :( We did get him to eat some meat this month, which was awesome. I think he was growing and having a protein craving since he stopped eating it after a week (mom shaking her head in frustration!). He also loves ice cream and froyo, so I know he's definitely taken up some of mom's favorites.

Too Cute

Ok, he wasn't really a naughty boy, but it was too good of a photo opportunity to pass up. It was a chair in a restaurant here in Tacoma.

We also introduced him to spray parks. He was a bit unsure about surprise water coming out of the ground, but I'm sure it'll soon be his favorite summer activity.

Mama and Papa

Good times with mama and papa. He was a trooper and went to the Nordstrom Anniversary Sale with me. We got him some cute new shoes, but that's about all we could manage at the store. He'd rather spend time exploring or eating ice cream.

My cutie pie is growing up so fast and we love him to pieces!

Home Sweet Home for One Year

Today marks the one year anniversary of moving into our first home as well as our move down to Tacoma. I'd like to say I got some awesome pictures of the whole family in front of our house to commemorate the occasion, but Caleb was already down by the time Josh got home. And this mom ain't pushing back bedtime for a photo. 

I almost just posted a photo of the house (isn't it adorable?), but then Josh arrived home from work so we did a selfie (naturally).

We are so very happy in our home and with Tacoma. I particularly love...

...the window in our kitchen and how I can look into the backyard and see the flowers or dog running around. 

...the light that comes into the front room and how Asha and Caleb look outside together. 

...that we are so close to parks. There are at least three within walking distance. 

...the location. We can take a 15 minute walk to the Proctor district for coffee, library books, groceries, and the farmer's market. Or, hop in the car for fun at Point Defiance Zoo, Aquarium, and park. Or, go to the waterfront. 

...that we have a guest room, so friends and family can stay with us.

...our blueberry bush (wait, that's Caleb...well, I love it, too).

...that I know my way around town now, and we have our favorite spots (but still have opporunties to discover more!).

...that it is ours. 

It's amazing to think about all that has happened over the past year - especially with Caleb. It feels like we've lived here forever (in a good way). This definitely feels like home now!

Truths and Life

I was just telling Josh the other day how I felt bad about my blog. I feel like I've neglected it a bunch lately...well, since Caleb was born. On top of that, it's has somewhat become a Caleb and family style blog. Not that this is bad, but maybe you're getting tired of it. I went on to talk about how I didn't know what else to write about anymore and not to mention my time feels much more limited. If I write a blog post lately, it's usually been for Hellobee. The time that I have to write is now in the evening, but by that time I just want to veg on the couch. I felt like throwing my hands up in defeat. 

However, as I was walking with Caleb and Asha this afternoon, I realized I do have things to write about in this blog space. Now, tell me if I'm wrong here, but I think you enjoy posts about the foods I cook and bake - remember Baker's Corner? Or how about what books I'm reading or shows I'm watch (like when I'm vegging on the couch). Maybe you're curious about my garden (it's growing). I could also tell you about Asha's new collar. The blog will go on....now, to find the time to write. But I have the motivation and ideas!

That was my truth, now about life. Here's some ramblings...

  • This article rang true for me. I'm tired.
  • Caleb does something everyday that cracks me up. Watch him after swim class in the YMCA locker room. 
  • Simply Recipes is a great blog and I have yet to have a bad experience with her recipes. This Vietnamese Style Noodle Bowl looks delicious. I have a crazy obsession with noodle bowls in the summer. Please make this for me.
  • I have never liked kombucha until this month. I think my taste buds changed after having Caleb. I like red wine and now kombucha. What's happening to me? Specifically, I like the Rainbow Cloud kombucha and have been sipping the Rose Jasmine flavor. I feel so healthy. 
  • I am pretty sure I am the tannest I have ever been in my entire life. I have a tan on my feet with lines for my flip flops. I should have a good store of vitamin D before we head into winter (because Winter is Coming, my friends).
  • I am on the eternal quest for good face lotion to use in the morning at night. I have some specific requirements - the AM lotion needs to have SPF and the PM lotion needs to help my aging face. I also don't want it to be so thin, I like to really think I'm getting moisture. Any recommendations?
  • I'm reading Business Boutique right now. Well see where it takes me. 
  • We're going to Kauai this September. Oh boy, oh boy, oh boy. Now, can somebody fly with Caleb for me and just meet me there?
  • I bought these leggings in the Nordstrom Anniversary sale. I have this want to be a yoga mom, apparently. But really, I want to buy all. the. things. in the Nordstrom sale.

Okay, enough jibber jabber. Fingers crossed Caleb stops teething and starts taking longer naps again so I can use nap time for "me" stuff...like writing on this blog.

A Happy and Fun Fourth

We had our very first Fourth of July celebration in Tacoma yesterday. We had a wonderful and patriotic day. Tacoma pretty much shuts down for the Fourth of July and everyone heads to the big Freedom Fair that runs along the water. This is just another thing we love about living in this town - you really get more of a small town feel here (and it's not really a small town!). We decided to join the crowds and check out the fair. 

Of course, to get there we had to walk down, and yes back up, a very steep hill - definitely got our workout for the day. 

At the Freedom Fair, there was an air and car show. Caleb's nap was during most off the air show, but we did catch some planes from our house. Pretty neat! But we did make it down for the car show, which I'm glad because Caleb got to see wheels. He loves wheels and shiney things, so the car show was a.w.e.s.o.me. He was in his happy place.

I always like to make something sweet to celebrate and cherries scream America to me. I got some delicious Rainier and Bing cherries and made a sweet cherry pie. 

Caleb is a fruit fanatic so naturally he's thrilled our backyard has a blueberry bush. He can't walk by the bush without getting a blueberry. And watermelon is a must for the Fourth of July. 

To wrap up the day, we fired up the grill and had some sausages and brats with coleslaw. Yum! No fireworks for us, but we heard them (so did Asha, and she was not thrilled or impressed with the booms).

Caleb's 18 Month Update

I seriously feel like I just wrote one of these month updates. And now Caleb has reached 18 months old -- that's 1-1/2 years. It really blows my mind, especially if I look back at a photo from last June. How much and how quickly these little ones grow. It's so amazing! 

I have to say, my favorite thing that Caleb does right now is ask to be picked up and then reaches out for the other parent and then wraps his arms around both of us in a big, family hug. He also grabbed both of our legs and hugs us. Oh my heart. Also, his kisses. I melt. 

Although sometimes when he wants to be picked up, he just wants to be carted around while he points and jammers at us to show him, take him, or give him something like a little prince. 

He's definitely in toddler-land now with tantrums and shaking his head no. Yes, I have now been the mom in the grocery store with the kid that's crying/screaming and turns into a rag doll when you try to pick them up. He does not want to be strapped down, especially not in a cart when there are things on the ground to explore. If I do let him down, he goes along and picks up groceries. For instance, two hug soy sauce jars, ribs, prepared mashed potatoes, and Ruffles were all placed in our cart at some point in our last shopping trip. 

But the hugs, kisses, laughs, and smiles make all the toddler moodiness disappear for me. 

Time with Mom & Dad

I know his joy of being with mom & dad won't last forever, so I better soak it all in now. My favorite is our afternoon froyo dates. 

Family & Friends

We love to hang out with friends - this month we saw Finely as well as Kaia and Matthew. 

And we also got to visit Grandma Jan & Grandpa John down in San Diego (see the post here). He just loves his grandparents. 

Just One Cute Guy

I realize I am biased, but isn't he just too freaking cute. His hand is in his mouth a lot these days - those dang teeth keep popping up!

Playtime and Gardens

Caleb likes to type on the computer and be like dad. Not sure what he's typing up, but it's serious business. But even more fun, is playing on the bed and plopping down on pillows. Heck, yes. 

Dirt and rocks are also fun to play with in the garden (he even tries to eat them, but mom doesn't allow it to Caleb's disappointment). 

Climbing

If it has an incline, he will climb. Stairs are the best, though. 

Favorite Toy

Oh my gosh, this car. He LOVES it. We have to hide it each night so he doesn't see it in the morning. Otherwise, it would be straight to playtime without breakfast. He'll push it, want to be pushed, climb on it, pretend steer it (like a crazy man), bring things into the car...it's the best toy ever, bar none.

Speaking of cars, this kid just loves anything with wheels. Actually, wheels, gears, or things that can be pushed or spun. He has such a curious mind and is so interested in figuring out how things work. I'm not sure if this is a normal kid thing or not, but it's so cool to see his so focused and interested in things. Maybe we've got a future engineer on our hands.

The Park

There are lots of parks in Tacoma, which is good since Caleb loves the park. If he sees a park now and we don't stop, he gets a bit upset. His favorite is probably the swing, but also climbing up to the slide is a close second. Of course, we go down the slide on our belly, feet first. It's the best way to slide.

Such a Ham

I can tell Caleb has a good sense of humor, and a goofy one at that (yea, kinda like his parents). It's hilarious when he sees something good or interesting and his mouth goes round and he says, "ohhhh!"

Ice Cream

This kids loves ice cream and froyo. He gets pretty serious about it with double spoons. Lots of focus in that face, right? I shared my ice cream with him on his 18 month birthday, and then later we paid for it with a crazy sugar high toddler. Worth it, though.

Yummy in my Tummy

Caleb's all time favorite food: blueberries. Then followed by any other fruit. Right now we are chowing on blueberries, cherries, raspberries, blackberries, melon, bananas, watermelon. I feel like half our grocery bill is on fruit. We have to hide the fruit - it's nuts.

Otherwise, he'll eat yogurt. Or the baby veggie/fruit pouches. Sometimes mac n' cheese or toast. But really, he's a picky and inconsistent eater and it dries me batty. It is cute that he'll go into the cupboard now and bring something over for me to give him. Usually it's right before a meal...of course.

Another Birthday

Honestly, I don't feel older. I also don't feel like I'm really an adult although all evidence points to it - married, house, baby, dog, no longer stay up late. Then again, I drive by the college, or worse a high school, and I see how freaking young the students are...and it's at that point I realize I am an adult and I am in fact older. Oh, and then I go on to complain about said college kid like, "look at how short that girls shorts are!" or something like that. Yea, I'm getting older. 

But that doesn't stop my from celebrating and enjoying the birthday fun. I'm always down for a weekend that's dedicated to doing and eating all the things I want to do (let's ignore how selfish and spoiled that sounds, mm-k?). This year I shared my birthday with all the dad's as it fell on Father's Day. I'm generous like that. 

Saturday started the celebrations. We got crepes for breakfast at Jewel Box. You know how I love crepes. Then some awesome gelato in the afternoon at a new place in our neighborhood called Alegre Bakery and Gelato (definitely a new favorite). 

Saturday evening we got our first babysitter that wasn't a parent. She actually was the gal that watched Asha when we were down in San Diego the weekend prior. She mentioned she babysits so I say, "yes, please!" So she watched Caleb while we went out to a nice dinner at En Rama in downtown Tacoma. The meal was delicious as were the drinks. My favorite dish was the braised chickpeas. Doesn't sound as good as they were, but they were so, so good. And my "bartender choice" drink that was like a Manhattan was perfection. We had a lovely and romantic evening. 

Sunday was my birthday and Father's Day. Unfortunately, Josh was sick with some wild stomach virus thing. While Josh rested up, Caleb and I finished off the cake I made for my birthday. Yup, I made my own cake. However, I love baking so it was a birthday treat in both ways - to make and to eat. By the way, it was a hummingbird cake and was completely scrumptious. I opened my cards and gifts and felt loved and happy.

Caleb took me out for some frozen yogurt since he knows how much I love it. He secretly loves it to. Okay, it's not so secret. Do you see how serious his face is when eating it? It's serious business. Don't get in his way from eating it. He certainly is my child. 

The birthday ended with with my birthday gift from Josh: he put Caleb to bed while I went and got a relaxing massage. Ahh, sweet relaxation. On the way home, I picked up Thai food, because Thai is my one of my all-time favorites. And that's a wrap. It was a great birthday (although poor Josh with getting sick on Father's Day - such a bummer. Don't worry, we'll treat him to a second Father's Day day). 

Cooking in the Summer Heat: 4 Methods + 8 Recipes

Ugh, summer heat. Sweat. Sticky. HOT! If you canโ€™t tell, I donโ€™t take the heat very well. I grew up in San Diego and itโ€™s like anything under 65 is cold and anything over 78 is too hot. Now, I live in the Pacific Northwest and Iโ€™ve adapted a bit to the rainy, cold season. The summers are pretty awesome, but we always seem to get a few days were the heat is too much. And since we only have a few days of it every year, nobody invests in air conditioning. Donโ€™t get me wrong, I LOVE summer, but those super hot days can be rough.

Itโ€™s on those hot-hot days where cooking seems like a terrible idea, but dinner must be served. You want to serve healthy meals to your family without having to get take-out and spending a pretty penny. Whatโ€™s a girl to do?

So in anticipation of those hot days, I came up with four different ways to make dinner without turning on the oven and heating up the whole house. Better yet, Iโ€™ve got some tasty recipes to go with it. I hope you are inspired to keep on keeping on in the summer heat.

1. Grill

In my mind grilling is synonymous with summer. Living in the Pacific Northwest really makes you appreciate the sun (although, weโ€™re heat wusses). Standing in the rain trying to grill is just not what I call fun. So when the sun comes out, the grill is uncovered and put to action. We bought a new grill this season and I love it. Itโ€™s an awesome gas grill, so itโ€™s quick to heat up and get dinner rolling.

Spinach Goat Cheese Turkey Burgers (with a kick) โ€“ Burgers are always a win on the grill, but I prefer turkey burgers. This is  thee  turkey burger recipe I use most often for turkey burger days. I often just use fresh spinach instead of the frozen, but both work great. Also, get the Tony Chachereโ€™s as it really makes a big difference on these burgers. There is a little kick, but nothing to be worried about โ€“ this being said by a gal that canโ€™t take much heat.

Grilled Moroccan Chicken โ€“ This is a recipe I discovered this year and the flavor is a knock out. We eat a lot of chicken in our household, so itโ€™s always nice to get a change of pace. Definitely try serving it with the Moroccan couscous to make it a nice, well-rounded meal.

2. Salad

Is salad a method? Probably not. It seems like it should be to me. Like, โ€œletโ€™s salad it tonight, honey!โ€ I usually waive off salads as a meal, but if you add some protein then for me it magically becomes a meal. I especially appreciate salads on hot, summer days when cooking seems like itโ€™ll melt you (picture the Wicked Witch of the West) and you cringe at putting anything hot near you (or in your mouth). Then itโ€™s salad to the rescue!

Greek Farro and Chickpea Salad โ€“ This salad is our new favorite and is on heavy rotation in our weekly meal plans. We usually add some grilled meat (weโ€™ve tried chicken, steak, and pork โ€“ all great), however, itโ€™ll can totally stand on its own. Farro is my new obsession and you should totally try it out if you havenโ€™t already.

Chicken Blueberry Feta Salad โ€“ My favorite salads have fruit in them. Itโ€™s actually a spinach, apple, goat cheese salad that got me to start liking salads. This is a more sophisticated version and is so delicious and refreshing.

3. Crockpot

It might seem odd to pull out the crockpot in the summer as most of us consider it more of a fall and winter cooking method. You think stews and soups, which is not really what you crave in the summer. However, there are some great options for the crockpot for summer cooking. Better yet, it doesnโ€™t heat up the entire house. I heart my crockpot and love discovering new recipes for it. I even discovered, but have yet to try, that you can even make banana bread in the crockpot!

Crockpot BBQ Beer Chicken โ€“ When I was young, I loved those tubs of Lloydโ€™s BBQ pulled chicken. As an adult, I sort of cringe at the thought, but I still have that same love for pulled chicken. This recipe is delicious and is great as a sandwich or in quesadillas!

Slow Cooker Greek Chicken Gyros โ€“ Greek food is a favorite and feels so fresh in the summertime. This chicken has great flavor and something for the whole family to enjoy.

4. Stovetop

The stove is another great way to avoid heating up the whole house in the summer. My favorite thing on the stove is probably pasta. But the options are limitless. You can keep it simple and do a grilled sandwiches (amp them up like this one), quesadillas, eggsโ€ฆjust so much goodness.

BLT Pasta โ€“ Take a delicious sandwich like the BLT and make it a pasta, and Iโ€™m in! This is simple yet oh so yummy.

70th Celebrations and SD Sunshine

Ahh, sunny San Diego. Look at that: the sun, the ocean, the palm trees...but most importantly it's where my parents live. If you didn't know already, I grew up in Encinitas, CA and still get to visit since my parents live in San Marcos. Last week we headed down to celebrate my dad's 70th birthday. We had a great time and I especially appreciate the extra help with the little guy. 

Of course we went to the beach, but the main event was the birthday party. You don't turn 70 years old everyday (well, you could say that about any age, but you get the point).

I had the honor of making the German Chocolate Cake this year. My dad requests it every year for his birthday. It was a Grandma Ruth speciality. Shed used to make it for him every year (and every time she came out to visit), but now it's up to my sister, mom, and/or me to make the cake. Everyone seemed to like it, so I think I did a pretty good job. It's a lot to live up to with it being "mom's cake" (or in my case, "grandma's cake").

The big party was on Saturday night. We got the outdoor patio at Bentley's to ourselves and all our family friends came to celebrate...and drink wine. We got to tell fun stories about my dad like how he loves to listen to the cockpit when on flights or take notes when he reads. My dad is pretty awesome and I so glad we got to have such a great party for him.

With my dad, there was wine. Definitely wine. It wouldn't be my dad's party without wine. And prime rib. I have to say the wine was excellent. The wine was some of the finest I've ever tasted. I'm happy to say I like wine now, too. Somewhere between being pregnant and having a kid, I developed a taste for red wine. The three wines served were Keever, Altamura, and 7&8. If you ever get a chance to taste one, do it.

It was so wonderful to see my parents with Caleb. You can see the love! Caleb will run up and give them big hugs. I love it! Of course, they spoiled him (exhibit A: see my dad eating cookies and ice cream with Caleb). It's so great to see them together.

When you visit home (yup, I still call it home. I call Tacoma home as well. So I have two homes), there is always a crowd. We saw all our friends and Aunt Lindsay and Damon came down to visit, too. Monkey and Max, our friend's dogs, even stayed with us a couple of days.

Daddy (Josh) also got to spend some good, quality time with Caleb.

No, they didn't really ride the motorcycle. 

I think Caleb's favorite part of the trip, though, was this Little Tikes car. It's an understatement to say he loved it. I think it's a blessing and a curse - good he loves it and keeps him preoccupied, but he doesn't want to stop playing. But when you see the joy on his face, you know it's a blessing. ;) 

Caleb got his first taste of the Pacific Ocean. He's been before, but only in a carrier. This time he walked up to the water on his own...and then fell. Watch the video, it's hilarious. There was lots of time at the park, in the sand, or roaming around Caleb-style. 

Unfortunately, I got a sinus infection while we were down there. I got some delicious pho, so that helped. And we had to get Lofty Coffee because I love it. Plus, the food is killer. The salted caramel latte, ahhhh so good. The eggs so freaking good. I die in food happiness.

We also went to Bellows for an early birthday dinner for me. I had a cauliflower steak, which was surprisingly super delicious. 

And when in SD, you gotta get Mexican food. We got some delicious tacos at Oscars Mexican Seafood.

And to get there involved some flying. Caleb and I went down early, so we flew on our own. It was exhausting, but we did it. He wanted to do all the things he's not supposed to, and when I stopped him from doing them we got a bit of a tantrum. Blueberries helped for maybe five minutes...it's the small things. 

Luckily, Josh was with for the return flight. Still exhausting, but the help was nice. He was in a better mood, but it's non-stop wiggling the whole flight. And he was tired, so in normal toddler fashion he thought the best time to nap was when we landed in SeaTac. Figures.

Oh, and we survived our first flight delay. It wasn't too bad, maybe even for the best, because it gave us time to eat breakfast and stretch our legs. You can see Josh entertaining Caleb with the McDonald's neon sign. 

I love getting to visit SD and my parents. Can't wait until our next trip (except for the flight part, that's not something I really look forward to, hehe).

Caleb's 17 Month Update

Gosh, the way time is moving these days Caleb is going to be 18 months before I even get his 17 month post live. But luckily, I'm not that far behind. Whew! This mama needs some spare minutes in her life. #momlife #lifewithatoddler

Caleb has picked up speed and is now practically running these days. He gets into all sorts of mischief. Climbing, putting things in his month, running the opposite direction from me, and being a total goof are his favorite things. Exhibit A: the only way to get his 17 month block photos was while he was stomping on the coffee table. Only for the photos (or, that's what I tell myself).

You might think he's surfing, but that's our coffee table. And yup, his legs were kicking. He thinks it's hilarious. 

Of course, we need the look back of things that happened between 16 to 17 months. My least favorite being the molars coming in. #teethingsucks. 

Adventures

Caleb has his first swim class and first time in a pool this month. He wasn't a fan of the water, but each time we go he gets more comfortable and happy. In fact, the last class there were smiles and splashes. 

Also, we discovered he enjoys running the aisles of Costco and picking up bags of chips. Another fun morning we adventured to our old stomping grounds with friends to the Ballard Farmer's Market. Oh, and we had a close encounter with a walrus. 

Walking and Smiles

Caleb is very proud of his walking. Always a smile when he gets to roam around. He loves to take off and check everything out. Everything. Every stone. Every stick. Every blade of grass. Everything.

Sunglasses, or glasses of any kind, are a bit hit.

Family 

We love hanging out with this little goofball. He has the best laugh and almost always (almost) has a smile. 

Brown Grandparents

It was so great to have Grandma Nada and Grandpa Don visit us this month. Caleb had a blast hanging out with them. We took some nice walks and enjoyed quality time together.

Play Dates

We've made some great friends and Caleb enjoys playing with them, especially at the park. We have some fun play dates with Vivian, Johann, and Teddy. 

Although, he still might consider Asha pup his best friend. He loves to follow (eh hem, chase) her around the house saying "daag daag" and then giving her a hug. He also really wants to throw the ball of her with the chuck-it. 

Goofball

If there is one things Caleb loves to be, it's a goofball. He loves to giggle and smile. Lately he likes to go in the cabinets and close the doors so he's hidden inside. Then he'll peek out at you. He tries to fit into everything - baskets, boxes, etc. - if it's Caleb-sized, then he's there. 

Dancing and clapping and smashing his face into the glass...of course.

Food and Teething

Caleb is still quite a picky eater. Favorites include yogurt, blueberries, cherries, graham crackers, puffs, and baby food pouches. Bananas lost favor for a few weeks, but returned to favor by the end of the month. Although he's reaching for the taco, he really didn't want it. He just really wanted to squish it and throw it on the floor. And he took a bite of the cookie, but then claiming under the table was more interesting than the cookie.

Shenanigans 

Along with glasses, hats are also quite fun to play with. It's pretty adorable when he puts an adult hat on his head and tries to walk around. I imagine him saying, "whatzz up" in the below pictures. 

I love the little surprises Caleb leaves in the house. Toys in shoes, cabinets, and other random places. For example, the giraffe toy in the pasta colander.  

He also realizes that the door knob is the key to opening the door. Luckily he's still too short, but I am fearful for my future when he grows. 

18 months is right around the corner and I'm sure there will be more growth and fun stories to tell.

Trying On Trendsend

Over the past few years, subscription clothing services have cropped up online everywhere. They are a great option for anyone that cannot always find time to get to the mall to go shopping or for those that dislike shopping for clothes (which I could never understand). The first time I really heard about this type of service was with StitchFix. I heard about this pre-Caleb days so finding my way to the mall wasnโ€™t particularly hard. Even so, I was intrigued by the idea and wanted to try it out. What drew me was the idea of someone stylish helping pick out outfits for me and choosing items that I may not have picked out on my own.

I ended up trying Stitchfix out and I was impressed with the overall experience. Over the years, I have ordered a few additional boxes (box 1, 2/3, and 4). I even did a box for maternity wear and ended up keeping the whole box. However, the past couple StitchFix boxes I received, I was less than thrilled. It felt less personalized and like they didnโ€™t read my requests. Perhaps as StitchFix has grown bigger, the stylists are not as experienced and there is more of a service model that has taken out the specialness of the experience. I donโ€™t know, but I was disappointed and I havenโ€™t felt very motivated to order another box.

Recently, I have been seeing advertisements for Trendsend, which is a similar subscription service. One of my favorite stores, Evereve (formerly called Hot Mama), created Trendsend so itโ€™s their stylists and clothes that they send to you. At the Evereve store I go to, the sales ladies are so helpful in helping you find great outfits, so I wanted to give this service a try. I received my first box this week.

When I opened the box, there was a very personalized letter that explained why the picked the pieces they sent me, and how to make them into outfits. Not to mention, they sure know how to get to a momโ€™s heart because they said how adorable my son is in the letter (*heart swells*). They described how to accessorize the outfits as well.

I did feel that they read my profile and provided outfits that looks good on me and fit what I asked for. I ended up only keeping two items, but if I had all the money in the world I would have kept it all โ€“ just that darn thing called a budget. Overall, I was quite pleased with the experience and would consider trying it again.

What Did I keep? 

I kept the Gidget shorts from outfit one and the Skies are Blue dress from outfit three. I almost didnโ€™t keep the shorts because I was so unsure about how I looked in them. I tend to get shy and doubtful about clothes on me, but Josh insisted they looked great. Then as I was looking at the photos for this post, I saw myself in them and thought, โ€œhey, I do look pretty good in them.โ€ I only own three pairs of shorts and none of them actually fit me well, so I was in need of new shorts. They have a raw hem, which apparently seems to be a trend right now โ€“ who knew?! Not me! They fit great, something I would have passed over in the store on my own, and are a great addition to my closet.

The Skies are Blue dress is the other item I kept. Itโ€™s cute and surprisingly comfy. In fact, I think I can still chase Caleb around in it. I plan on wearing it for a photoshoot weโ€™re doing as a family for my dadโ€™s 70th birthday.  Itโ€™ll be nice for the summer weather that seems to finally have arrived to the Pacific Northwest (fingers crossed).

Would I recommend it?

Yes, I would recommend Trendsend to others. If youโ€™re looking for some updates to your wardrobe, why not give it a try (no styling fee like StitchFix, which is nice!). They cater to moms and have some great options for us moms-on-the-go!

A Lovely Mother's Day

I sometimes just can't believe I am a mother. It's just so amazing to look at Caleb and know he's my son. He is the light of my life and brings me such joy. Being a mother has been the hardest, but most rewarding thing in my life. Caleb brings a whole new, wonderful layer to our lives. I love being a family! I feel so honored to be part of the motherhood club.  

I am so grateful for the beautiful, strong, caring mothers in my life. The most important being my mother and my mother-in-law. They have taught me so much about being a good mother. I love them so much.

This was my second mother's day and it was so awesome. Josh and Caleb did a super job at treating me like a queen. I woke up with a little Caleb lying on top of me and giving me a great big, tight hug. Oh, the love and joy! Then we got a lovely breakfast at Jewel Box, which of course included coffee. And I enjoyed one of my favorite things, crepes! 

We went to church and they gave all the mothers a rose and pink donut. Yay!

We finished the day with a trip to the mall where I picked out my new mom bag, which was Josh's gift to me. I love it and feel so stylish. Much lighter then the diaper bag. More yays!

To finish the day, we did a family walk around the neighborhood and lucked up with some sunshine. It was fun to see Caleb on the walk - so much excitement over rocks and flowers (although it takes 45 minutes to go 4-5 blocks, haha). 

This mama didn't have to cook dinner, but we picked up some delicious Thai food. It was such an great day.

Caleb's 16 Month Update

Boom! Another month. Craziness. And I think it's time we officially call Caleb a toddler. Why do I say this now? Because he's officially toddling. This month he got up and started walking. Yea, sure, he'd been taking steps, but he started to put those steps into much, much longer stretches. I think he just needed to realize he can walk because he won't stop - he's like the energizer bunny the way he just keeps going and going. 

And he just keeps getting cuter. Or, maybe that a mother's eye and the fact that she now gets sweet, big hugs. *Heart swells* My little boy is growing up so fast!

He did more than just start walking, too. He transitioned to one nap and is starting to get those dang wisdom teeth. I love, love, love that he also grabs a book and then sits in my lap. He still flips through the book without me finishing the page, but it's just the cutest. 

Good Friends, Good Times

We've really make some great friends. I enjoy seeing them interacting now as well. Sharing snacks, looking at books, driving cars - ahh, so darling to watch. 

Time to Walk

After one weekend he just decided to start walking - April 24th to be exact. It was amazing how he just started going. Something just clicked and he was up and going. He gets so happy when he walks, too. People are commenting how great a walker he is already and he's really only been walking a few weeks now. That's my boy!

Too Cute

I'm "mom biased" here but he's so cute. I love his snuggles. I love how he puts our hats on his he'd and thinks it's hilarious (and proceeds to crawl/walk around). I love his smile. Ahhh, love him!

Fun Times

Lucky for us, the zoo is only about a 5 minute drive from now. With a membership, we get to go a bunch. Another favorite is the Children's Museum of Tacoma, which is not really a museum but a mega play space...it's awesome. Now that the sun is making more appearances, we also get to check out all the parks and shores. Yay!

Playtime

I think we have a little athlete on our hands. He LOVES balls. It's adorable. He can make hoops and is a pretty good goalie. 

Swings, trucks, climbing (yup, that's him on the table there). It's playtime friends.

Learning Tower

We put out the learning tower that allows him to be level on the counter. He's still a bit young for it, so we're not using it a lot yet. But he really got a kick out of it.

I can't wait to get him helping me in the kitchen!

He's getting the hang of the fork, sorta. And after dinner, we have to have a bath...because toddler's eating is...messy.

Best Friends

Asha and Caleb are the best of buds. Asha is very patient and sweet with Caleb. And Caleb has learned to be gentle (most of the time) and gives Asha big hugs (too freaking cute). I love that they're growing up together. 

I'm sure 17 months will be here before I know it!

Daily Dinner: Pasta with Goat Cheese, Ham, and Spring Veggies

Did you guys have a nice Easter? We did! And we had some great food in celebration. We had Honey Baked Ham, scalloped potatoes, and asparagus. Then we finished it up with a carrot cake roll. Yum! 

But the ham; it was so big! Josh and I both enjoy ham, especially Honey Baked Ham, and it's fun at Easter because it's really the only time of year we buy it. However, the smallest ham is actually  large for just two people. Oh sure we have Caleb now, but heโ€™s apparently on an all bread-yogurt-fruit-only diet, so heโ€™s not helping out with ham consumption.

That means we got lots of leftovers! Ham sandwiches are awesome, but there are only so many sandwiches you can eat. I froze some of the ham, but needed to come up with some other ham dishes. I also had some asparagus and peas hanging out in the refrigerator, so I decided a pasta would be perfect.

Oh man, you guys, Iโ€™m so glad I made this pasta. We just ate the pasta dish and I just loved it. I worried that the sweetest of the ham might be weird, but it all came together so nicely. We loved it so much that I just had to share it with you all. I hope you enjoy it as much as we did.

Pasta with Goat Cheese, Ham, and Spring Veggies

Ingredients:

  • 1 pound (16 ounces) pasta*
  • 1 tablespoon olive oil
  • 1/2 onion (or 1 shallot), peeled and minced
  • 3 cloves garlic, peeled and minced**
  • 1 bunch asparagus, cut into roughly 1-inch pieces, ends trimmed off
  • 16 ounces (2 cartons) fresh cremini or white button mushrooms, sliced
  • 1 cup fresh peas (frozen would work as well)
  • 8 ounces goat cheese
  • 1/3 cup milk
  • 1/4 cup grated Parmesan cheese, plus some for garnish
  • Salt and black pepper, to taste

Directions:

  1. Cook the pasta al dente in a large pot of generously-salted water, according to package instructions.  Once the pasta is nearly ready, scoop out 1 cup of pasta water and reserve it on the side (to be used in the recipe later). Then drain the pasta and set aside.
  2. Add 1 tablespoon olive oil to a hot pan, and add the onion. Sautรฉ for 2 minutes, stirring occasionally.  Stir in the asparagus and mushrooms, and continue sautรฉing for another 4-6 minutes, stirring occasionally, until the mushrooms have softened. Stir in the garlic and peas, then cook for an additional 1-2 minutes, or until fragrant, stirring occasionally. Add the ham and give a final stir to mix to incorporate. Remove pan from heat and set aside.
  3. In a separate small mixing bowl, add the goat cheese, milk, parmesan and 1/2 cup of the reserved hot pasta water. Whisk until combined.
  4. Once the pasta is cooked and drained, add the ham and vegetable mixture as well as the goat cheese sauce to the pasta, then toss to combine. If the sauce is too thick, you can stir in an extra 1/4 to 1/2 cup of the reserved hot pasta water to thin it out. Taste to see if more salt or pepper is needed. Garnish with extra Parmesan and black pepper, if desired. Serve immediately.

*For the pasta, I used penne, but farfalle or rotini would work great

**I used 3 Dorot garlic cubes - these are the best! You can get them in the freezer section at Trader Joes.

Easter in Photos 2017

We had a great Easter this year. Caleb was much more aware of the holiday and it was a joy to see. We did all the Easter traditions - the bunny, egg hunt, egg decorating, and yummy food.

The Easter Bunny at the Tacoma Mall wasn't quite as scary as Santa, but we did get a cry at the end. Then the Easter Bunny showed up at church and Caleb was much more interested than scared. Who is this big bunny?

The Easter egg hunt started at 10am, we got there at 10:03am and it was over. Kids are c-r-a-z-y. The eggs are in piles and then it's like the Hunger Games. Caleb walked up to one egg, sat down and that was good enough for him. Then another girl gave him two eggs. Three eggs for his first egg hunt ain't half bad! Watch the video of him at the egg hunt.

Caleb got a cute Peter Rabbit basket. Then the Easter Bunny came and give him lots of goodies. The book Dance (a Caleb fav), The Country  Bunny (one of my childhood favs), a Peter Rabbit puree pouch, Bubble Bath, and Cogs water gears bath toys. Guess what he grabbed for first...the food pouch! LOL

We had some delicious, homemade challah as well as a carrot cake roll. Ever since I saw a cake roll on The Great British Bake-off, I wanted to make one. Verdict: delicious!

Caleb's 15 Month Update

Another month has passed and Caleb is another month older. Funny how that works. ;) He's growing up so fast and already at 15 months. Here's the latest with the little man...

This past month we made some big strides...literally. He's not quite walking all around, but he can take a few steps between Josh and me (or if something nearby is very tempting and he's already standing). He does little things all the time that just amaze me. My favorite right now is that he takes shoes (anybody's shoes) puts them on his hands and crawls around. It's hilarious. 

Also, boxes are the bomb. He loves to crawl inside, push them around, or better yet, push the box while chasing Asha. Asha is a big deal right now. Caleb just loves her. He will sit in the dog bed with her, turn on the TV, and lie back on her. He will pat her gently, or hug her. However, he also enjoys chasing her around the house either crawling or pushing his walker. 

Smiles and Such

Caleb has the best smile, and his laugh...you can't help be laugh along with him. The most smiles and laughs happen when we play games. One of his favorites is standing up behind me, using my back for support, then peeking around my shoulder in a game of peek-a-boo. 

Mom and Dad

Weekends are the best because we get quality time together as a family. Caleb loves his Dad - it's so adorable to watch. They are like two peas in a pod. My favorite photo is the one of both of them on the couch eating toast. Cracks me up!

Great Outdoors

We've had some sunny & nice days where we can get outside. Caleb absolutely loves being outside. He doesn't seem to mind the sidewalk on his knees - ouch! So much to see and explore outside. We can't wait for the really good summer weather to come! (yup, no socks and no shoes...they just come off, immediately).

Playtime

Like any kid, Caleb is a big fan of playtime. He loves going to the Children's Museum and we go about once a week. I don't know where his energy comes from, but I think he'd go all day if I didn't stop him. Too. much. fun. 

He also figured out how to stack the rings (and other things). It's fun to see him figure it all out and get excited when he's understands.

Right now, his favorite activity is pushing the dump truck around the house...better yet, chasing the dog with the dump truck. I'll get a photo and post next month. ;) 

PDX Trip

We did our first mini-trip down to Portland. We had such a great time, and Caleb also enjoyed the trip. Traveling with a kid is MUCH different, but it's still lots of fun. We went on some adventures and ate delicious food

Small spaces and Technology

Phones, remotes, computers - anything with screens seems to attract this kid. It's like he can sniff it out and find where we hide them, too. He'll point and scream when he sees it. Ahhh! I think Siri is going nuts.

He enjoys crawling into anything he can fit into -- shelves, furniture, boxes, and pots. The trouble can be getting out! That's when mom steps in and helps out. 

The pots are hilarious - he tries to put his butt into pots that are way to small. However, the pasta pot seems to be just right for his little patootie. And it's not just pots, but he tries to sit in a lot of things. He sticks his butt up and then falls back and sits down. He'll sit on other kids, the dog, on his parents...whatever looks comfy.

Friends

Asha is a great pal. She puts up with a lot, and will share her doggie bed. I have a feeling they'll be best buds for a long time. Especially once Caleb realizes that pulling on her ears isn't her favorite thing.

We also enjoy hanging out with little humans, too. We've met some fun kiddos and mamas around Tacoma and playdates are our favorites. 

Eating

It drives me nuts - one day he likes something, then the next day he doesn't want anything to do with it. Argh! Right now favorites include fresh fruit, yogurt, cheese, garbanzo beans, mac n cheese, and toast with butter. Sadly eggs went to the "no" list, but I keep trying. #neveracceptdefeat

P.S. Have you ever tried to feed an overly tired baby. See photo below. Caleb holds his head like it's about to explode and screams and cries. Believe me, it's not an experience you want to do everyday. 

My little baby is growing up so fast! Loving every moment!

Baker's Corner: "Oh thank you, thank you! You won't regret it. I promise! And I swear I'll be around more frequently. It's just that it's been busy, you know."

Reader: "I guess so. So, what's so good that you're coming back to these parts?"

Baker's Corner: "It's for the Apple Strudel! It's easy and oh so good. I can't wait to make it for you." 

Reader: "Well, get hopping. Maybe you can make it for Easter."

Baker's Corner: "Yes, yes! An excellent idea!"

That was corny. But, I like corny. I am corny. And I like apple strudel. I made this over the weekend since Josh has been asking me to make Apple Strudel for ages. Honestly, I've been complete intimidated by it. But now, now I know, it's actually easy! And it's delicious. Seriously, get in the kitchen!!!

Easy Apple Strudel

Ingredients:

1 puff pastry sheet, thawed according to instructions

Apple Filling:
4 cups apples, peeled, cored and sliced*
1/3 cup sugar
1 teaspoons cinnamon
1 teaspoon vanilla extract
1 tablespoon flour
Juice of 1/2 a lemon

Raisins (Optional):
1/4 cup raisins
1-2 Tbsp rum

Breadcrumbs:
1/3 cup panko breadcrumbs
1 Tbsp butter
1 Tbsp sugar
1/4 tea cinnamon
Pinch of salt

Topping: 
Egg wash (1 egg, beaten)
4 tablespoons cinnamon sugar (4 tablespoons sugar and 1 teaspoon cinnamon combined)

Directions:

Remove one sheet of puff pastry from freezer and thaw according to instructions. Usually overnight in the refrigerator, or for 2 hours. 

Heat oven to 350 degrees.

Apple Filling: Add apples, sugar, cinnamon, lemon juice, and vanilla in a bowl and toss to combine; set aside for minutes 15 minutes to sweat (or longer, if desired). Add in flour and toss to combine.

Raisins: Soak raisins in rum for 15 minutes, or longer, until plump. (Note: You can totally skip the raisins if you don't like them. But they are soaked in rum, so...)

Breadcrumbs: In a small skillet over medium-low heat, melt  butter and add the breadcrumbs, sugar, cinnamon, and salt. Stir to coat and cook, stirring frequently as they can burn quickly, until crumbs are an even golden brown and very fragrant. Donโ€™t let them burn. Scrape into a dish (or theyโ€™ll keep cooking in the pan) and set aside.

Assembly: Roll out puff pastry to a 12x16 rectangle on top of a sheet of parchment paper, Lightly score puff pastry into three vertical columns, with the middle column being 7 inches wide and the two outer columns at 2ยฝ inches. Cut slits on either side of the center column to 1 inch wide and 2ยฝ inches long.

Place breadcrumb mixture in the center of the puff pastry then the apple mixture (Note: if there is any juices in the apple bowl, leave them out!). Then fold top of puff pastry down by pulling alternating slits from one side to the other, making sure ends reach the edge of filling. Brush egg wash on top and sprinkle with cinnamon sugar. For extra crunch, finish with a sprinkling of coarse sugar.

Transfer strudel on top of parchment paper to the oven and bake for 15 minutes at 350. Then increase the temperature to 400 and bake 8-10 minutes, or until golden brown. Remove from oven and cool on a wire rack for 5 minutes before slicing. 

Serve with vanilla ice cream and/or coffee! 

* Apple Note: I used 3 extra large Fuji apples. It would probably be 4-5 smaller apples. Honeycrisp would also be delicious! Then, to slice the apples, I used a mandolin on the thinnest setting (or just slice it very thin).

Portland Mini-Trip: Adventure Edition

The food on our recent trip to Portland was stellar. I'm still drooling over it. But, food isn't everything. Right? It's actually the combination of food and experiences that make a trip fantastic. Good Food + Fun Times = Great Trip. Lucky for us, our PDX trip had both!

Where we Stayed.

We stayed at at AirBnB, which we decided it best if you're traveling with a baby/toddler/kid. You can a kitchen, get more space (multiple rooms, even), and more privacy (no worrying about the people next door hearing a crying baby at 2am). We loved our experience on our babymoon, and loved this experience as well. I think we're regular AirBnB-ers now. 

Our AirBnB was in a great location on Nob Hill and just a few blocks from NW 23rd Street, which has tons of restaurants and cute shops. This turned out very convenient on the first morning when it snowed. We just walked down the street for our coffee and donuts. I also managed to getaway during one of Caleb's naps to go through the shops. It felt so great to get out and just browse without worrying if Caleb was fussing. 

I think the AirBnB may have been Caleb's favorite part of the trip. We loved the stairs. If you set him down, he would immediately head to the stairs and banister. It was pretty hilarious. 

We thought the place was great. Josh thought it would make the perfect bachelor pad. HA!

What we Did.

Oblations Paper Press

There was so much we wanted to do and such limited time. On the must list was revisiting the site of our engagement. Josh did the cutest proposal at Oblation Paper Press in the Pearl District. It was a walk down memory lane as we strolled the Pearl District and headed to Oblations. Sadly, the brunch place we ate at before he proposed is gone now as is the red couch in the store itself. But, it was fun to go back and relive our proposal day - such happy memories, such a happy day! Don't we look so young? And blond hair - haha.

Powell Books

What's a trip to Portland without a visit to Powell's Books? We got lost in there the last time we visited, and then our cell phones didn't have any service so we wondered around trying to find each other for a good while. Luckily, we stayed together this time so no getting lost. We mostly checked out the childrenโ€™s section. There were tons of children's books and we had a awesome time checking out the books. Caleb enjoyed some of the books as well, but mostly he enjoyed pushing his stroller through the aisles. We ended up getting the Opposites book and the Childrenโ€™s Book of Virtues for Caleb's library collection. 

Downtown & Ace Hotel

The lobby of the Ace Hotel is a great place for photos. As you can see from the Then & Now photos below, we've made this stop before...many years ago. We haven't changed much...right??!! 

We didn't spend much time downtown. We didn't even go to the main square where Nordstrom and stores are located. We walked by the food truck area, and the Ace Hotel on our way to Powell's and the Pearl District from our parking spot. I guess we'll have to spend more time downtown next visit (and get some shopping on - especially with the no sales tax!).

Pearl District

As I mentioned above, we went to Oblations and Powell's which are both in the Pearl District. We have always enjoyed this area of Portland - trendy, hip, and cool buildings. We didn't spend much time going into shops or anything, but we did enjoy walking around a bit. If we had more time, we would have spend more time walking around and probably grabbing a bite to eat in this 'hood. But alas, time beckoned us to be quick (and so did Caleb's nap time). 

NW 23rd Street

This was just a few blocks from our AirBnB. There are such cute shops along NW 23rd. I could have done a lot of damage if I let myself do some serious shopping. But I have restraint...a little. I did get a cute hat at Goorin Bros. We also grabbed some treats at The Meadow. This was also the street where Salt and Straw, Barista, and Blue Star Donuts was located. 

Waterfront 

When we pulled up to the Waterfront it was practically hailing. Then, after about 10 minutes the sun came out. That's the Pacific Northwest for you. Josh likes to say, "if you don't like the weather, just wait 15 minutes." It's pretty true. Anyway, before grabbing dinner, we did a stroll along the waterfront. It was quick beautiful with the sun coming through just after the rain. There was even a rainbow! This is such a lovely place for a stroll in the early evenings. 

Pine Street Market

Pine Street Market is a relatively new addition to Portland - it just opened in the spring of 2016. Josh and I alway seem to find ourselves at these type of marketplaces. We love the concept, find the buildings they are in super cool (usually they are historic buildings), and think it's fun to see a few different restaurants of a city all in one space. Pine Street Market was originally a Carriage & Baggage Building that was used as a livery and horse-drawn carriage storage facility until the early 1900s (read more about it here), which we found interesting. Deciding where to eat was tough, but with the rainy day we opted for ramen. Afterwards we just had to buy some bread and pastries for later. Definitely a fun place to have a meal and check out. It worked especially well for bringing a noisy toddler to as well. 

Portland Childrenโ€™s Museum

Wow! This is a GREAT children's museum. It's much bigger than the Children's Museum of Tacoma will all different rooms and activities. It was perfect for the rainy day, too. Caleb has a blast even though he did get bird poop on his head as we walked into the museum! I think his favorite activity was the mega bright lite board. He also enjoyed the grocery store, vet, construction site, and campsite. Oh, and there was a room with African instruments, and he learned to play the drums. Definitely a place to take your kiddo, and we will be back for sure!

That was quite a lot to do in just a day and a half! We had tons of fun and are so glad we were able to get down to Portland for a quick, last-minute getaway. 

Portland Mini-Trip: Foodie Edition

I confess...I am a foodie.

I know this might sound good, but I have always have felt slightly embarrassed to admit to being a foodie. Which got me thinking...why? After some thought, I guess it comes down to my need for everyone to like me and that as a foodie someone might think I'm a food snob. But really, it just means I like food. I like eating it, cooking it, baking it, reading about it, researching it, talking about it, photographing it...just like a hobby. Nothing to be ashamed of, right? I hope you agree. 

Great, and now that the foodie confession is off my chest, I want to talk about food. Surprise! Josh is transitioning jobs right now and got a few days off between work. We seized the opportunity to go on a family mini-trip down to Portland. We haven't been to Portland since we moved to Seattle in 2010. Crazy, huh? I mean we just live three hours away. I chalk it up to: life. 

Portland has really grown since the last time we were there, especially in the restaurant scene. It's become a real foodie town. As soon as I knew we were headed down, I started to compile a list of lists of where to dine. I looked at my Pinterest board, asked Facebook friends, and read some of my bloggers Portland must-eats. You know, foodie research.

I know we wouldn't be able to do it all - not just because it was just a day and half long trip, but because bringing a baby along changes everything. Oh, and my list was way over 50 restaurants/cafes long (heh!), but that's neither here or there.

We did get to some pretty awesome places. Also, I snuck some food photos for you (again, slightly embarrassed to be taking photos of food. Apparently not enough to not take them, though). 

Okay, enough of the talk. Here's where we went and what we ate...

Breakfast  

Barista {Day 1 - Coffee} There is a picture of me with the Barista sign from our last visit (see photos below). I am pointing at my head because it was when I was working as a Starbucks barista in Eugene. Wow, that seems like a long time ago. Back then, I'm pretty sure that was the only Barista location, but this time we found there were several locations.

Lucky for us, Barista was just a nice walk away from the AirBnB we were staying at. It snowed that morning, so we walked down and got ourselves some delicious coffee. I ordered the hazelnut latte and Josh got the Valhorna Mocha. I normally don't go for hazelnut lattes, but it was housemate syrup and I saw someone rave about it on Yelp. It was delicious - slightly sweet, nutty, and smooth. The mocha was a winner, too. The chocolate was rich, but not too much - it was just right. 

Blue Star Donuts {Day 1 - Food} Honestly, I don't have a huge want to go to Voodoo Donuts. Most of them look like they are covered in cereal. They might be delicious, and if I get the chance, I'll try one. Mostly, though, I look for a classic donut with a fun twist. And that is what Blue Star delivered. They were so freaking good. 

The gal was late to open the store, but she let us hang out inside (snow in the PNW always slows things down!). So we had time to debate what flavors to get...it was so tough. We ended up with the Raspberry Rosemary, Mexican Hot Chocolate, Smoked Grapefruit, Bourbon Blueberry Basil, and Breakfast fritter (bacon potato goodness). I think my favorite was the Raspberry Rosemary donut, and Josh couldn't decide but mentioned the Smoked Grapefruit being a favorite because it was just so different. I think I have to say it: this was the best donut I've ever had. 

Sterling Coffee Roasters {Day 2 - Coffee}  I always have a dilemma when traveling. You find something you really enjoy one day, but should you return to it knowing you really liked it or should you try something new? What if the something new isn't quite as good? #firstworldproblems. I usually end up forcing Josh to make the decision. Generally, Josh is on Team Try Something New, so that usually want we end up doing. And that is the case on our last morning in Portland. Instead of Barista, we walked a little longer to check out Sterling. It's a tiny coffee shop made more for commuters than dwellers. It was swanky and nice inside, though. I ordered a vanilla latte with their homemade vanilla syrup. Josh ordered their house caramel latte. Both were smooth, creamy, and delicious. We also purchased some beans to take home and we are still enjoying their coffee. Their beans are quite good, in fact. Unfortunately, I don't remember the exact ones, but I believe they were Ethiopian.

We took our coffees to go and strolled back to our AirBnB for some food to go along with the coffee. Man can't survive off coffee along...or, can he? Naaawww. Food required!

Trifecta Annex - {Day 2 - Food} If you continue to read, you'll know we went to Pine Street Market. When we were there we picked up some bread and pastries. For breakfast, we noshed on sweet citrus morning buns. They were buttery and had a lovely touch of orange zest inside. Take that an dip it in your coffee. Now, that's what I'm talking about.

Lunch

Lardo {Day 1} Our intention was actually to get lunch at Tasty 'n Alder, but it was a 45 minute wait. When you have a baby who's nap is coming in about an hour this just won't do. Instead, we crossed the street and hit up Lardo. This place specializes in meat and sandwiches. If you can do a good sandwich, oh man...

I indulged in the Pork Meatball Banh Mi while Josh got the Philly Joe Jones. Both were terrific. To accompany the sammies, we go the fries which were also great with herbs and such. Josh got some red velvet beer, which was in fact red colored. He thought it was great and refreshing. A great spot for lunch! 

Tasty โ€™n Alder {Day 2} Basically everyone I asked mentioned we should go here. It's one of John Gorham's restaurants, and he's the hit restaurateur in Portland right now. We ordered the house cottage cheese with pineapple jam for Caleb. Caleb refused it, but don't let him tell you if it was good as he's currently only living off fruit and puffs right now. Anything else gets dropped, hidden, or squished. We ate it instead and our impression of cottage cheese was changed for the better. And now I want to know how to make it!

I enjoyed the Polenta n Sugo, which was basically creamy polenta topped with a chicken and pork ragu sauce with mozzarella and topped of with an egg. Oh man, it hit the spot on the rainy day. Josh took the waiter's advice and ordered the Korean Fried Chicken, which was spot-on spicy and delicious. This place didn't disappoint...even after all the hype. 

Caleb enjoyed this Bamba (peanut puffs). And flirted with the ladies next to us.

Snacks

Salt & Straw Ice Cream {Day 1 & 2} Oh man, oh man, oh man. This ice cream is the BEST. Da Bomb! The creme de la creme. Probably the best ice cream ever. Statement made. Done. 

The flavors are freaking amazing. Different but not so wildly different that you scratch your head in confusion. We opted to share a flight of ice cream. Yup, a flight of ice cream. We found it to be the perfect way to enjoy several flavors. We tried the Chocolate Gooey Brownie, Arbequina Olive Oil, Coconut with Petuniaโ€™s Salted Caramel Bars, and Pear & Blue Cheese. We both thought the Pear & Blue Cheese was the best (of the best!). And Caleb liked their spoons. Can you find the missing spoon in the photo below?

Guys, it was so good, we made a pit stop before hitting the road back to Tacoma for a treat to go. Josh got the rootbeer float, which was dynamite. I couldn't resist and got a waffle cone of the pear and blue cheese. 

Dinner

Jo Bar & Rotisserie {Day 1} We arrived late afternoon to Portland, and didn't have much time before Caleb needed to go down for the night. He's an early to bed guy, so we need to eat at 5pm if he's going to join us. We were staying within walking distanced to 23rd Street in the Alphabet district (slash near Nob Hill), so we walked down to see what would work. We landed at Jo Bar, which received good ratings on Yelp (not that Yelp is the end all be all of rankings, but it usually steers us well). The good thing about early dining is happy hour. We both got a drink - Josh a beer, and me a cocktail (blood orange old fashion, my fav!). Our favorite dish was the fondue. Not only fun to eat, but delicious. Then we shared the rotisserie chicken since rotisserie seemed to be their specialty. We ended up having to gulf it down because Caleb started to get tired (that's code for - fussy, flailing arms, shrieks, etc). But it was a solid dish and worked well for that evening. 

Pine Street Market {Day 2} We always love a good market. Like The Ferry Building in SF, Krog Market in Atlanta, Pike Place in Seattle, Granville in Vancouver. If there is a market in the city, you can probably guess Josh and I will check it out. Pine Street Market is fairly new - just opened a year ago (according to some guy that served me some food). It has several little restaurants inside and is very hip/trendy. And we loved it. We ended up with ramen from Marukin Ramen, which was soul warming. Before we left, we bought bread & pastries from the Trifecta Annex to enjoy later. I would definitely want to come back and try more places! I love marketplaces. 

What a great weekend! What a culinary adventure! I'm pretty proud of us for getting to so many places with a baby/toddler. We definitely have to return to PDX soon. So many good places to try still. Have you gone to Portland recently? Foodies Unite!
